Spring is in the air and on the plate - Parsley Potatoes

We love carbs at our house!!! Potatoes are a staple as sides to our meals. The kiddos love mashed potatoes, french fries (who doesn't?!?!) and the grown ups like roasted, garlic potatoes or these parsley potatoes which are quick and yummy!!!

Parsley potatoes

I made a small batch for my husband and myself, but you can easily double up on the ingredients for 4 people!!

  • 3 golden yellow potatoes - peeled, chopped into cubes or wedges and boiled until just softened
  • 2 tablespoons butter
  • a handful of large leaf parsley - chopped
  • a medium sized onion - chopped into small cubes
  • salt and pepper to taste (even a dash of paprika is really nice!)
Once the potatoes are boiled, drain them and set aside to cool slightly. Chop the onion and parsley. Begin by heating the butter in a pan on medium heat, add the potatoes and onions to the butter along with the salt and pepper. Let everything sit over medium heat for just a few minutes until the onions begin to soften (become slightly transparent). Try not to mix too often because the potatoes are soft and break up easily. If it is beginning to stick you can rock the pan back and forth and side to side to prevent it from sticking. Try flipping the potatoes and onions once to cook on the opposite side, again let it sit a few minutes over medium heat. Finally turn off the heat and add the parsley, gently stir to combine all the ingredients.  Add more salt & pepper to taste, serve warm!!
